Lemony Roasted Cauliflower Recipe

Lemony Herb Roasted Cauliflower-🍋 This is one of my favorite weekly meal preps and it’s so simple to make

Did you know, Cruciferous Vegetables are so good for you 😊 

Cruciferous vegetables include arugula, bok choy, broccoli, brussels sprouts, cabbage, cauliflower, collards, kale, kohlrabi, radish, and turnips.

They are rich in fiber, low in calories and will keep you feeling full longer. They contain so many incredible phytochemicals which help metabolize and balance hormones such as estrogen. Cruciferous vegetables are so incredible for our bodies that they made it on the Daily Dozen List created by Dr. Michael Greger author of  How Not to Die and He suggests at least a 1/2 Cup serving per day. 


Amazing Roasted Cauliflower Recipe-Now…Let’s get Cooking 🧑‍🍳 

If you have a big family you can double this recipe.

1. Preheat oven to 375 degrees Fahrenheit

2. Simply take a head of (preferable organic) cauliflower, rinse, remove leaves, cut away from stem, then chop into smaller florets (think bite size-ish)

3. Place chopped cauliflower in a large bowl and add 2 tablespoons of avocado or olive 🥑 oil to coat and stir

4. To the bowl, add 3 tablespoons of nutritional yeast (hello b12 nutty goodness), 1/2 teaspoon of paprika or more if you love paprika, 1/2 teaspoon of chipotle (if you like a little spice), 1 teaspoon-1 tablespoon of oregano or herb of your choice, 1/2 teaspoon of salt, 1/4 teaspoon of salt, and juice of 1 lemon

5. Stir to evenly coat

6. Add to a parchment lined backing sheet, you might need 2 pans

7. Evenly lay out so there is no over lap

8. Roast at 375 degrees for 40 minutes, stirring half way

9. Last but not least…toss the hot cauliflower in some fresh herbs (hello antioxidants) like parsley and enjoy! 😉
